Piña Colada Green Smoothie

My breakfast this morning was one of my all-time favourite beverages – my Piña Colada Green Smoothie. Absolutely DE-LISH! I wasn’t going to post this here, but I had a recipe request from one of my MFP buddies, Vegan Chick. This one’s for you, girly! Good thing I took this pic this morning for my Facebook Vegan Eats album. ;-)
Piña Colada Green Smoothie Recipe
4 cups baby spinach leaves, preferably organic
1 and 1/2 cups fresh, ripe pineapple, diced and chilled
1/2 ripe banana, frozen
1/4 cup coconut milk (I used Thai Kitchen brand)
1 cups cold water
1 scoop vanilla protein powder (I used Whole Foods’s 365 Vanilla Whey)*
2 teaspoons sweetener of choice, optional (I used Splenda)*
2 tablespoons raw chia seeds (I used Navitas)
Add water, chia seeds and spinach to blender and process until all leaves are liquefied. Add remaining ingredients and continue blending until smooth. That’s it! It tastes even better if you let it sit in the fridge for a couple of hours. Enjoy!

*Nutritional info does not include sweetener with calories. I don’t like the taste of Stevia and since I’m currently trying to lose weight, I use Splenda – for now. Can also substitute agave nectar or other sweetner). Also, to make this 100% vegan, use a vegan protein powder, like soy, rice or hemp.
